I heard of a guy who made his UCC filing# as the plate# and the police reportedly don't hassle him as it's registered private property. He has a certificate of title where his strawman is listed as the lienholder, but he obviously has no registration. This was done for a car, though. Perhaps a similar thing can be done for a bike. Although one may rather keep the MSO, one would have all the liabilities as owner. With the above-described scenario one would have a secured interest in the bike/car sans the liabilities of ownership--in theory.
