Not denseness, you just have not had the experience yet. (nor have I, I have, however, been bent over far enough to know that I don't like... well, you know)
In the event of you being pulled over, AFTER having served them notice of your novation, giving them an opportunity to deny the novation, with no response, and recording the non-response, thus invoking estoppel on the issue,
THEN,
you would be in the same place as if you had done it before they processed and issued the license.
One word of Caution:
If you are not the legal name, and you don't have a D/B/A recorded, I would do that first.
Search this site for DBA.
Then, you could also novate that you are the "True Name" D/B/A/ LEGAL NAME. That would further remove you from the claim that you are the LEGAL NAME.
Now, I ain't a lawyer, and I don't play one on TV, so, you have to take whatever is written on this board as if a three year old was writing it, and go make sure you have the balls and knowledge to do this.
I am just offering you suggestions on what I would do, should I want to possess a license to drive. (I do not want that).

Just accept a ticket, and then bring the novation to court at ticket time?

If you ever "accept" (If you do not refuse it) a ticket, there is no controversy, correct? You are guilty.
Me, I would never "accept" a ticket. I may write on it:
"No Liability Assumed, No Value Assured, Without Recourse, Character as stated on DRIVER LICENSE."

I do not always connect the dots easily.
Of course I understand you are not advising anyone, or me, to do anything. I am simply interested in learning about those things which are always effective at source, and not merely dealing with symptoms.
Does it work?

You may want to study more before taking such a course of action.
Does it work? Dunno. I prefer not to have a bogus license, rather than to try to doctor one up.
There are some that would say that I am talking out of my posterior.
You decide.
