Travelling the common ways

I have some questions on how to deal with a citation I received and what to do or say once I get into court.

Here's the situation. I was driving late nite and I ventured over into another lane slightly and was pulled over by an officer.I had a car full of children with their mother inside.One child 3 at the time wasn't in a child seat cause there was no room for one.The other infant had to be breastfed by the mother cause he was driving us crazy screaming and crying.

So the officer "asked" to see a license so I showed him one.He then came back with a citation for not having children in proper car seat restraints.When he asked would I signed I then showed him some UCC paperwork and told him I don't have to sign that he could send the citation in the mail and that I wouldn't accept it.The paperwork I showed him threw him off so he went back to his car and came back with another citation similar to the first one he wrote.

Now with all that carp being said here is the part where i KNOW I can win.The citations were dated wrong.One says Sun. Jun.6th and the other Sun. JUn. 7th and the times are 2:18 and 2:20 am.He also where the signature is supposed to be wrote in there "refused to sign".I didn't touch the ticket except to take it from him and told him I would see him in court.The officer didn't show for the first date and was giving a subpena to appear next week with me.I want to know any suggestions I should do while in court,like whether I plea,put the officer on the stand,what motions I should use etc. Let me know I am very new at this.
